Pork Medallions w/ cherry sauce

For dinner we made pork medallions with cherry sauce for the main dish. It was fab! So tasty! We also made broccoli soup and we added lots of cheese. It was the best broccoli soup! We probably could have pureed it a bit more, but it was still tasty. And, for dessert we made orange and raspberry cake. The cake itself was orange, and the icing was raspberry. The cake was simply great! The next day it was even better, it was so moist and delicious!

Salmon and Bread


For dinner last night we had homemade bread (four hours) and we had delicious salmon. It went pretty well, except the bread ended up looking like a balloon because we let it rise too long, but it tasted great. The salmon had a kick to it and was definitely spicy, but it was delicious. Everything was fabulous!

Rib-eye with Rub

Tonight we made a rib-eye steak with a lime butter sauce and a rub. It was delicious, a bit spicy however. It was also very limey. The rub had 1 1/2 tsp of kosher salt, 1 1/2 tsp of chipotle, 1 1/2 tsp of paprika, and 1 1/2 tsp of ground cumin. The rub was very tasty and I would suggest it any time you have a rib-eye steak. In a separate bowl mix 4 T of softened butter, 1/4 tsp of lime zest, 1 T of lime juice, and a minced small clove of garlic.  It was also very easy and simple to make, which I need or my food does not taste very good lets just put it at that.

Chicken and Shrimp

For last night's dinner we had a lemon and garlic roasted chicken and spicy BBQ shrimp. They were both very tasty; the shrimp especially. The chicken we believe would have been tastier if we hadn't used a hen, however that is all the Grocery store had in the size we needed. My daughter made cookies for dessert which were delicious, once she realized she did not put enough flour and she fixed that. To top it off we had salad and mashed potatoes, which were good as well.

Herb-Roasted Turkey

For dinner one night we made a delicious herb-roasted turkey breast. It was great; it was very easy, and delicious. My daughter and I cook together, and we have a blast. The next day I sliced it, put it in a skillet with 1/2 cup of chicken broth and a T of butter, covered and let simmer for fifteen minutes, and stirred. It was moist and very tasty! My whole family and I loved this meal.
